We serve Cuban comfort food straight out of grandma’s kitchen with an emphasis on fresh, natural and healthy meals, just as she intended for us.
Located in the Apambichao Building, a funky turn of the century Victorian landmark on Portland’s East 28th Avenue, our scene is straight up Old Havana and our hospitality is genuinely Cuban!
About Our Cuban Creole Cuisine
People ask all the time “What is Cuban cuisine?” “Do you have chips and salsa?” Although Cuba and Mexico share many historical ties, Spanish heritage, similar colonial experiences, common language and so on, the foods of the two countries are poles apart. The indigenous cultures, climate and geography, the impact of African culture, the colonial economies, etcetera, all of these characteristics and more helped shape each nation and set them on very different roads to what they would become. Where Mexico and Guatemala share many similarities, Cuba with her culture and cuisine are much more aligned to those of Puerto Rico, the Dominican Republic and even New Orleans. These are Creole cultures sprouted from the colonization of the Americas.
So what is Cuban cuisine? The shorter answer: exotic Spanish cuisine. A marriage of Spanish staples reborn in the Caribbean with tropical root vegetables, plantains, roasted meats, hearty stews, deep fried delicacies, rum, rice and beans. It’s 500 years of fusion culminating in a delicious mixture of Spanish, African and Caribbean foods to make one dynamic cuisine.

Classic Cuban Cocktails
In the glory days of pre-revolutionary Cuba, famous Havana restaurants, bars and nightclubs such as Tropicana, La Floridita, Sloppy Joe’s and La Bodeguita del Medio were notorious for their exotic cocktails. In the days of prohibition North American tourists flocked to Havana in search of the tropical Cuban lifestyle and of course, Cuban rum. It is from this period that such well-known cocktails as the Daiquirí, the Mojito and the Bacardi Cocktail, earned their fame.
Here at Pambiche we return to La Habana’s days of yore when her streets were filled with the young appetite for life and the varied means of enjoying it. Our cocktails are made with premium brand spirits, housemade fruit juices, 100% pure cane sugar and the expertise & love required to make classic Cuban cocktails. ¡Salud!

Pambiche’s bakery or “Repostería” is built out of a love for the craft of baking, years of dedication to the trade and a true knack for working with sweets. At the helm are partners in pastry and co-owners of Pambiche, John Connell-Maribona and Roseanne Romaine.
The duet has been together since 1992 sugar coating dessert houses, patisseries, restaurants and bakeries all over the Portland Metro area, and in 2000 opened Pambiche together with partner Hada Salinas-Pereyra, bringing traditional Cuban sweets along with their own original Pambiche creations to Portland.
A New Jersey/New York transplant Roseanne grew up surrounded by the Cuban bodegas and cafeterias that dot the Big Apple and has a true love and understanding for the style and tradition of Cuban dessert making.
Roseanne is also a florist and owns Solo Rose Floral Studio
